“From Bees to Bottle” is the Northumberland Honey Company’s charming slogan, however it somewhat belies the skill and craftsmanship required to make a méthode traditionelle sparkling mead. This special cuvée is elaborated with the “Queen of Honeys”, namely freshly harvested Northumberland Heather honey which is carefully fermented and painstakingly hand-riddled by Luke and Suzie Hutchinson to produce an elegant mead with a delicate mousse and a persistent dry finish
