Ivy Blossom is often the last nectar available to the bees before the winter sets in. When conditions allow, surplus Ivy Blossom honey can be collected from the hives. This honey has a very distinctive character - torn ivy leaf and a hint of tyre rubber on the nose, it is cool and refreshing on the palate with a strangely pleasing bubblegummy flavour and additional notes of light resin and burnt toffee. Mad and marvelous!
